I would rather cook one evening well than two quickly. So the room seats forty-eight, once, and the menu is written after the morning deliveries come in, not before. What that asks of you is only time. Dinner here lasts as long as it lasts, and no one will bring the bill until you ask for it.

Most of what we cook comes from within a morning’s drive: fish landed at IJmuiden the night before, vegetables from the dune gardens behind Zandvoort, herbs from the terraces above the hotel. When something is not good enough, it does not come in, and the menu changes around the gap. That is the whole method.

Seven courses take about three hours, and we pace them to the table rather than the clock. A pause between the fish and the meat is not a delay; it is usually the moment the evening turns into a conversation. When it does, we wait. The kitchen would rather hold a plate than interrupt.

Twelve tables under a low vaulted ceiling, lit only at the table. There is no bar to wait at and no music to talk over — the room was built for the length of a dinner, not the turn of one. Guests arrive within the same half hour and leave whenever the evening has finished with them.

Pastries laminated overnight, fruit from the same terraces the kitchen cooks from, eggs however you ask. Served at the table rather than a buffet, because the first hour of the day is not a queue.

Shorter, lighter, and outside whenever the weather allows.
Three courses at most, built around whatever came in that morning and did not need the ceremony of dinner. The terrace tables are unmarked and given away in the order people arrive.

One drink, standing, before anything is decided.
The bar opens ninety minutes before the kitchen does. Vermouth from the cellar, olives, and the last of the afternoon light — the hour the room is at its least formal and, most nights, its best.

One service. Twenty-two seats. No second sitting.
Everyone is seated within the same half hour and the kitchen cooks for the room as a whole. Dinner runs about three hours, and no table is turned — the evening ends when the last conversation does.

Mise en place is finished by four, the one hour of the day when nothing in the room is moving. Service begins at seven and the first plates leave together, because there is only ever one room to send to. Nothing is called across the pass — the cooks work from a list they wrote themselves that morning.

The last plate leaves the pass around ten and no one hurries it. What follows is the quietest hour of the kitchen’s day — the boards come off, tomorrow’s list goes up, and the market order is written before anyone leaves. Upstairs, more often than not, the room is still talking.
